Chicken and avocado ciabattas
These chicken and avocado ciabattas are perfect for lunchboxes. 

4 skinless chicken breasts

1 tsp lemon juice

1 tbsp paprika

Salt and pepper to season

1 tsp olive oil

1 large avocado, chopped

Olive oil, for drizzling

1 ciabatta loaf

8-12 cherry tomatoes, chopped

Slice the chicken breasts in half and cover with cling film.

Bash with a rolling pin until slightly flattened to about 1cm thick. 

Squeeze lemon juice generously over the chicken and sprinkle with a little paprika.

Season with salt and pepper, and a little olive oil.

Place in a frying pan or griddle for 3-4 mins on each side until charred and cooked through. Remove from pan.

Cut the ciabatta in half and lay cut side down on the pan for about a minute.

Peel and cut the avocado into chunks and place on top of each the ciabatta halves.

Add the chopped tomatoes and the chicken pieces and enjoy.
