Chocolate and courgette happen to go extremely well together and make a super moist bread great anytime of the day.
1 large courgette, grated
130g whole wheat flour
55g unsweetened cocoa powder
1 tso Bicarbonate of soda
½ tsp baking powder
¼ tsp salt
¼ tsp ground allspice
60ml vegetable oil
100ml applesauce (unsweetened if possible)
95g granulated white sugar
100g brown sugar
6-8 tbsp buttermilk (or milk with juice of ½ lemon)
1 tsp vanilla extract
45g semi sweet, chocolate chips
Preheat the oven to 180°C / 350°F / Gas mark 4.
Line and lightly grease a 23 x 13 x 7cm loaf tin.
In a large mixing bowl combine the flour, cocoa powder, bicarbonate of soda, baking powder salt and spice.
In another medium size bowl beat together the oil, applesauce, both the sugars, buttermilk and vanilla extract.
Fold in the grated courgette with the wet ingredients.
Add to the flour mixture and mix it until just combined.
Stir in the chocolate chips.
Transfer the batter to the prepared tin and bake it between 55-65 minutes or until a skewer inserted comes out clean.
Transfer the tin from the oven and place it on a wire rack.
Remove the bread from the tin after 10 minutes and let it cool completely before slicing but if you can leave the bread to cool overnight it is much better.
