Peanut butter banana bread

High protein and silky finish with the bananas make this bread moist and delicious.
120g almond milk
1 tsp apple cider vinegar
130g whole wheat flour
150g light brown sugar
1 tsp baking powder
¾ tsp bicarbonate of soda
¼ tsp salt
2 bananas, mashed
60g peanut butter
1 tsp vanilla extract
2 tbsp water
135g chocolate chips
Preheat the oven to 180°C / 350°F / Gas mark 4.
Line a loaf tin with greaseproof paper and set aside.
In a small bowl stir together the almond milk and vinegar then set aside.
The mixture will curdle in about 5 minutes.
In a large bowl combine together the flour, sugar, baking powder, bicarbonate of soda and salt.
In another bowl mix together the mashed bananas, peanut butter, curdled milk mixture and vanilla.
Pour the wet ingredients into the flour mixture and combine together.
Add water if needed to get a batter consistency.
Stir in the chocolate chips.
Pour the batter into the prepared tin and bake for about 45-50 minutes or until a skewer inserted in the middle of the bread comes out clean.
Remove the pan from the oven and place it on a wire rack and let cool for 15 minutes before taking out the bread from the pan.
Cool the bread on the wire rack for at least 5-6 hours before slicing.
