A tasty recipe for your family!
500g caster sugar
150ml water
2 lemons, sliced
1 cinnamon stick
Scant pinch of nutmeg
½ tsp fennel seeds
32 small dried bay leaves
7 large, slightly unripe pears, peeled, cored and sliced into thin wedges
Place the sugar, water, lemon slices, cinnamon stick, nutmeg, fennel seeds and bay leaves into a saucepan over a medium heat and simmer, carefully stirring until the sugar dissolves and a syrup forms.
Add the pear wedges and increase the heat slightly.
Simmer gently until a thick syrup forms - this should take about 12 to 15 minutes. Stir from time to time.
Carefully spoon the preserve into sterilised jars, seal and label. Store the jars in a cool dark place until you are ready to use. Once open, keep in the fridge.
