Coconut chickpea curry

Lovely Indian spiced chickpea curry which is a great choice for vegetarians.
3 tbsp butter
1 onion, finely chopped
2 cloves garlic, minced
1 dried chilli, diced
1 tbsp ground ginger
1 tbsp garam masala
100g cashew nuts
400ml coconut milk
800g chickpeas, drained and rinsed
500g baby spinach, washed and drained
100g fresh coriander, chopped
Naan bread and rice to serve
Heat butter in a saucepan, add onion, garlic and chilli and cook for 10 minutes.
Add spices and cashew nuts and continue cooking for a further 5 minutes.
Turn down the heat and pour in coconut milk, chickpeas and spinach, cook for 10 minutes.
Adjust the seasoning, stir in the coriander and serve with naan and rice.
