Courgette and blueberry cake
Blueberries and courgette in a cake are a perfect match making this a huge hit.

3 eggs, lightly beaten

250ml vegetable oil

3 tsp vanilla extract

450g caster sugar

250g grated courgette

375g plain flour

1 tsp salt

1 tsp baking powder

¼ tsp bicarbonate of soda

1 tbsp ground cinnamon

325g fresh blueberries

Preheat the oven to 180°C / 350°F / Gas mark 4.

Lightly grease 2 large baking tins.

In a large bowl, beat together the eggs, oil, vanilla and sugar.

Stir in the courgette.

Beat in the flour, salt, baking powder, bicarbonate of soda and the cinnamon.

Gently fold in the blueberries.

Transfer to the prepared tins.

Bake for 50 minutes or until a knife inserted in the centre of a loaf comes out clean.

Cool 20 minutes in the tins then turn out onto wire racks to cool completely before serving.
