Cucumber and egg tartine

Tartine is the name the French have given to open sandwiches. These cucumber and egg tartines make great appetisers or work as an alternative to the traditional egg sandwich.
1 large fresh baguette
Half a cucumber, sliced
4 eggs
Mayonnaise
¼ spring onion sliced
Preheat the oven to 180°C/ 350°F/ gas mark 4.
Place your eggs in a pot of boiling water for about 10 minutes or until they are hard boiled. Remove and leave to cool.
While the eggs are boiling, cut your baguette width ways. You will probably get about 10 1 ½ inch thick slices, depending on your roll.
Place the bread slices into the middle of the oven on a wire rack. Cook for about 5 minutes or until crispy.
Remove from oven and leave to cool.
While the bread is cooling, remove the shells from the eggs and cut into thin slices.
When he bread is cool, generously spread on a layer of mayonnaise.
Top with the cucumber slices and egg.
Garnish with the spring onion before serving.
