Easy chicken casserole
2 tablespoons vegetable oil
125g skinless chicken breast fillet , sliced
1 potato, chopped
1 carrot, sliced
1/2 butternut squash, peeled and chopped into cubes
1 stalk celery, chopped
1 tomato, chopped
1 clove garlic, crushed
1 teaspoon of chopped sage
1 tablespoon tomato paste
2 tablespoons chopped parsley
1 cup of chicken stock
Pre-heat the oven to 180°C
Add oil to alarge pan and place over a medium heat, tip in the chicken and potato, carrot, butternut sqsuash and celery and gently fry until golden brown.
Pour in the tomato, garlic, sage, tomato paste, parsley and stock and make sure the ingredients are combined well.
Tip the mixture into a casserole dish.
Cover and place in the oven to bake for 1 hour.
