Fruit salsa

This delicious salsa, makes an excellent after-school snack, it is filled with fruits which are all major sources of vitamin C.
2 medium apples, cored
Handful of fresh strawberries
1 peach, stone removed
1 kiwi, peeled
1 medium orange, peeled
2 tbsp strawberry (or other) jam
2 tbsp brown sugar
Fresh thyme, garnish (optional)
Cut all the fruit into chunks and place in a food processor.
Pulse the processor on and off until the mixture is the consistency of regular salsa.
Transfer to a bowl. If you don’t have a processor, just chop all the fruit as finely as possible by hand.
In a small bowl, stir together the jam and brown sugar.
Add this to the fruit mixture and stir until mixed.
Serve salsa with ginger biscuits and even mixed with a natural yoghurt will delight the little one’s.
Garnish with thyme, if using
