Garlic pesto toasts with cherry tomatoes

These toasts are fabulous on their own or as a starter to the main event. Packed with basil and garlic, sure to please.
50g pine nuts
Large bunch of basil
50g parmesan (or vegetarian alternative)
150ml olive oil, plus extra for storing
2 garlic cloves
2 rustic loafs, sliced
12 cherry tomatoes, halved
Heat a small frying pan over a low heat.
Toast the pine nuts until golden, shaking occasionally.
Put into a food processor with the remaining ingredients and process until smooth, then season with salt and pepper.
Pour the pesto into a jar and cover with a little extra oil, then seal and store in the fridge.
When ready to serve, toast the bread under the grill, top generously with the pesto and cherry tomatoes and serve.
