Goats cheese, red onion marmalade & pine nut tarts

Lovely little tarts which are a perfect starter or canapé.
225g pre-rolled puff pastry
4 tbsp red onion marmalade
200g goats cheese log, sliced into rounds
4 thyme sprigs
2 tbsp pine nuts
Olive oil, to drizzle
Heat oven to 220°C/450°F/Gas 8.
Cut the pastry into squares and place on a baking sheet.
Leave a border of pastry around the edge and spoon some red onion marmalade into the centre of the pastry.
Place a slice of goats cheese on top of this.
Add some thyme and drizzle with olive oil and bake for 15-20 minutes, until the cheese has melted and the pastry has risen and is golden
