Ham and potato breakfast mash
Mash all your breakfast together for a really tasty treat.

3 bacon slices, cut

2 tbsp olive oil

3 medium potatoes, peeled and roughly chopped

Half onion, sliced

Pinch salt

2 eggs,

Salt and black pepper to taste

Heat the oil in a large saucepan and add your rashers, potatoes and onion. Make sure they are coated in the oil.

Sprinkle with a little salt and continue to cook for about 15 minutes, turning them every now and then.

About 5 minutes before you are finished cooking crack in your eggs. Combine the egg with the mix.

Serve with a slice of bread.
