Harissa couscous

400g couscous
Bunch of spring onions, finely sliced
3 tbsp roughly chopped mint
250g halved cherry tomatoes
400ml hot vegetable stock
1 tsp harissa paste
Tip couscous into a bowl along with the spring onions, miny and cherry tomatoes. Cover with hot vegetable stock mixed with harissa. Stir and cover for five minutes to swell. Add the olive oil and lemon juice and stir. Serve with a lamb tagine or another Moroccan style spicey dish.
