A fruity recipe that the family will love.
3 big apples - or 4 small
3 big pears - or 4 small
70g flour
50g sugar
20g butter, melted
2 eggs
100ml milk
1 tsp baking powder
1 tsp vanilla extract
1 pinch salt
Preheat the oven to 200°C/400°F/Gas 6. Grease and line a square baking tin. Sieve the flour, baking powder and salt.
Beat the eggs with the sugar until pale and foamy. Add the melted butter, the milk and vanilla extract. Mix well. Gradually whisk in the flour.
Divide the batter between 2 medium mixing bowls. Peel the apples and cut finely, using a mandoline, then add to one bowl and cover with the batter. Repeat the process with the pears.
Pour the apple batter into the prepared tin, smooth the surface with a spatula, then pour the pear batter. Smooth the surface again and bake for 40 minutes. Let cool, then remove from tin, dust with icing sugar and cut into 9 squares.

The name “invisible” cake comes from the thin slices of fruits that disappear in the batter when the cake cooks. When the cake is sliced, you can barely see the fruits.
