Italian beef ragout

200g tomatoes
115g courgettes
1 celery stick
55g carrot
100g stewing beef
1 tsp of olive oil
½ garlic clove
2 tsps of tomato puree
½ tsp chopped fresh thyme
125ml water
Wash the vegetables and peel the carrot. Dice the vegetables and cut the meat into small pieces.
In a heavy-based saucepan, heat the olive oil over a medium heat and brown the garlic and beef.
Add the vegetables, tomato puree, thyme and water. Cover and simmer for 25 minutes.
Remove from the heat and blend until the ragout has a smooth texture.
