Mexican bean toasties

Mexican bean toasties
These are a must make. They are loaded with protein and absolutely delicious.
 

4 wholemeal wraps, halved

160g tin black beans, rinsed and drained

1 tbsp olive oil

½ punnet cherry tomatoes, halved

½ packet white cheddar cheese, grated

1 tin of corn, well drained

2 scallions chopped finely

Place the black beans into the food processor and mix until it turns into a paste consistency.

Add the tablespoon of olive oil to the beans to loosen mixture.

In a bowl, combine the rest of the ingredients and mix well.

Spread 2 tablespoons of the bean paste over the halved wraps, top with the vegetable, cheese and scallion mixture.

Fold over the wrap.

In a large pan, on medium heat, cook for 2 to 3 minutes or until toasted and heated through.

Wrap in foil and pack into lunch box.
