Savoury rice with colourful vegetables, this is an excellent snack alternative and keeps well.
420g long grain white rice, rinsed well
470ml vegetable stock
400g can crushed tomatoes
1 red pepper, finely chopped
1 green pepper, finely chopped
1 tsp cumin
1/2 red chili de-seeded and chopped finely
400g tinned corn, drained
Fresh coriander, for garnish
In a large pot, add the rice and the stock and bring to the boil.
Reduce the heat and cook according to the packet.
Once drained, quickly mix through the peppers, cumin, red chili and corn then cover.
Season to taste before serving with garnish.
