Mushroom and pepper calzones

250ml homemade sauce, http://www.mummypages.ie/recipes/vegetarian-pasta-or-pizza-sauce
250g mozzarella cheese, grated
2 red peppers, cut into rings
225g, sliced button mushrooms
2 tsp vegetable oil
Preheat the oven to 190°C / 375°F / Gas mark 5
Line a baking tray with greaseproof paper, sprayed with olive oil spray and set aside.
Lightly flour a clean surface. Cut the pizza dough into thirds and set aside for a calzone.
Roll and stretch into a pizza shapes.
Spread the pizza sauce over half of each circle, leaving the edge uncovered.
Repeat with remaining pizza shapes.
Sprinkle each with cheese and scatter with peppers and mushrooms.
Fold in half and crimp edges.
Using a large spatula, carefully move calzones onto the oiled baking tray.
Lightly brush each with a little vegetable oil.
Bake in centre of preheated oven until golden on bottom, 20-25 minutes.
Let cool 10-15 minutes before serving.
Delicious in a lunchbox.
