No-bake carrot cake

This carrot cake is healthy and simply delicious. This recipe doesn’t require any baking making it even easier to whip up.
Coconut to decorate
150g dried dates, pitted and chopped
1 tsp orange juice
3 tbsp ground flax seeds
1 tsp ground cinnamon
800g grated carrots
100g walnuts, finely chopped
150g dried mangoes, roughly chopped
2 tbsp finely chopped orange zest
250g icing sugar
2 tbsp warm water
1 tsp vanilla extract
Line a 9 inch loaf tin with parchment paper.
Put the dates, orange juice, flax seeds and cinnamon in a food process and pulse on high for about a minute until they are a puree- like substance. Remove and set aside.
In a small bowl, combine the carrots, walnuts and mangoes.
Add the date mixture to the carrot mix and combine it all together.
Spoon the mix into your prepared tin and press it down firmly.
Cover with cling film and place in the fridge for 12 hours.
Now you can make the icing.
In a bowl, combine the icing sugar with the water and vanilla extract. Mix together until you get your desired texture. .
Generously spread over your carrot cake and cut into squares. Garnish with your coconut.
