Potato and cheese tortilla

Easy and on budget, perfect to serve with any vegetables you like or with a salad.
2 tbsp olive oil
2 x 400g ready-roasted jacket potatoes, sliced into small chunks
8 eggs, beaten
150g mozzarella, torn in pieces
Fresh parsley, for garnish
Use a large oven proof frying pan and heat the oil.
Tip the potatoes into the pan, shake it to allow the potatoes to cover the base, then fry for 5 minutes.
Pour in the beaten eggs so they completely cover the potatoes, scatter over the mozzarella and season generously with salt and pepper.
Leave the tortilla to cook on a medium heat for about 15-20 minutes, or until the base and edges look set.
Take the tortilla off the hob and place under a hot grill until the top is firm, then remove from the grill.
To serve, cut into thick wedges and a garnish of fresh parsley.
