Potato based pizza

2 large or 3 medium potatoes, peeled

1 egg

¼ tsp paprika

¼ tsp garlic powder

½ onion, finely chopped

2 tbsp tomato puree

¼ tsp oregano

45g grated mozzarella

1 slice ham, chopped

50g mushroom, sliced

A few basil leaves (optional)

Salt and pepper

Grate the potatoes and rinse them in a colander. Dry them well then transfer into a large mixing bowl. Add the egg, the chopped onion, paprika, garlic powder, salt and pepper and mix well.

Heat the oven to 160°C. Line a baking tray with parchment paper and transfer the mixture onto it. Press it down and give it a round shape. Bake for 25 to 30 minutes. 

When the base is cooked, spread the tomato puree, oregano, ¾ of the cheese, the ham, mushrooms, then the remaining cheese. Bake for 10 to 15 minutes until the cheese is melted. 

Add a few basil leaves before serving with a side of salad and cherry tomatoes.
