Quick leek and potato soup

A quick and easy soup perfect for winter evenings
300g leeks, washed and finely sliced
2 onions, finely chopped
300g potatoes, peeled and sliced finely
700ml vegetable stock
½ pint milk
Salt and pepper
Add the potato, onion and chopped leeks to a pan and fry until soft but not coloured
Add the stock and cook for 20 minutes until the potatoes are softened
Using a hand blender, liquidise the soup
Stir in the milk and add salt and pepper
Garnish with parsley and some croutons.
