Really quick chicken casserole
This really quick chicken casserole is so quick to make, tastes great and is low fat too.

1 tsp olive oil

4 large skinless chicken thigh fillets

3 shallots,quartered

1 carrot, sliced

8 new potatoes, skin left on and halved if large

Salt and pepper to season

500ml chicken stock , fresh, cube or concentrate

100g peas

Small bunch of tarragon, chopped

1 tbsp half-fat crème fraîche (optional)

Preheat the oven to 190°C / 375°F / Gas mark 5. Lightly grease an ovenproof dish.

Heat the oil in a saucepan and add the chicken thighs, shallots, carrot, potatoes, a little seasoning and the stock and allow to simmer. About 20 minutes.

Pour into the ovenpoof dish and add the peas and tarragon and place in teh oven for 30 minutes until the potatoes are soft.

Stir in the crème fraîche if desired.

Serve hot.
