Rice pudding with cherry sauce
Rice pudding is a tasty dessert that is love by many people. This rice pudding recipe is easy enough to make and the cherry sauce adds a pop of colour and some extra flavour. 
 

800mls full fat milk

150g caster sugar

300g medium-grain rice

1 tsp vanilla extract

150g cherries, thawed

1 tsp lemon juice

1 tbsp cornflour

Fresh mint leaves to garnish

To make your rice pudding, heat your milk in a saucepan over a medium temperature.

Add 50g of the caster sugar and the rice. Bring to the boil before reducing the temperature and allowing to simmer for about 20 minutes.

Add the vanilla extract and mix well.

Remove from heat and pour into a bowl. Allow to cool before placing in the fridge.

Now you can make the cherry sauce.

Place the chopper cherries in a saucepan over a medium heat. Add the lemon juice and mix in the flour. Bring to the boil, stirring all the time.  

Remove from heat after about 15 minutes when the sauce is thick.

Remove your rice from the fridge and spoon into 4 individual bowls.

Serve your hot cherry sauce over them and garnish with a mint leaf before serving.
