1.5kg boned leg of pork
For the apples
2 apples
Juice of ½ lemon
1 red onion, cut into wedges
1 tsp vegetable oil
25g unsalted butter, melted
1 tbsp light brown muscovado sugar
1 sprig lemon thyme
Few sage leaves
For the gravy
1 tbsp plain flour
200 ml dry cider
300 ml chicken stock
