Sausage and bean stew

Sausage and bean stew
Serve with creamy mashed potato and the kids will devour it.

6 spicy pork sausages

3 bacon slices, cut

2 tbsp olive oil

400ml chicken stock

400ml tomato sauce

2 onions, chopped

2 cloves garlic, finely chopped

1 chilli, finely chopped

1 sprig rosemary, leaves finely chopped

2 tbsp brown sugar

2 x 400g beans in tomato sauce

200g instant polenta

800ml water

200ml milk

50g butter

80g grated parmesan cheese

Freshly ground pepper and salt

Cook the sausages in the oil on a high heat for 4 minutes, until sausages are well browned. Add the bacon slices and cook for a further 4 minutes.

Once cooked, cut the sausages into quarters.

Add the onion, garlic and chilli to the pan and cook for 4 minutes.

In the same pot, add the chicken stock, tomato sauce, rosemary, sugar and beans. Combine and cook for 1 minute.

Reduce the heat and put the sausages and rashers back in. Cook for a further 10 minutes.  Add the pepper and salt to season.

Serve with mashed potato.
