Sausage and beans

1 tbsp olive oil
6 baby onions, peeled and left whole
12 pork sausages
1 red pepper, cored and finely diced
1 x 400g can of black beans,drained and rinsed
1 x 400g can of cannellini beans,drained and rinsed
1 x 400g can of chickpeas,drained and rinsed
1 x 400g can of chopped tomatoes
1 tbsp dark soy sauce 1 tsp soft brown sugar
1 tsp paprika
100g baby spinach, washed
Sea salt
Freshly ground black pepper
Heat the olive oil in a large saucepan. Add the
onions and sausages and cook until they are brown all over, turning the sausages frequently.
Throw in the red pepper and cook for 5 minutes.
Add the beans, chickpeas, tomatoes, soy sauce,
sugar and paprika, then season with salt and pepper. Cover and simmer for 40 minutes.
Just before serving, add the spinach and stir it into the stew until it wilts
