Sausages and lentil winter stew

Comfort food for winter, this dish has it all.
1 tbsp olive oil
400g sausages
1 onion, finely chopped
1 garlic clove, crushed
1 red pepper, sliced
250g lentils
275ml vegetable stock
In a large pan, add the oil and brown the sausages then remove.
Add in the remaining oil, onion, garlic and pepper, then cook, until softened.
Add in the lentils and sausages to the pan with the stock.
Bring to the boil, then simmer for 20 minutes and the lentils have softened and sausages are cooked through.
Serve with crusty bread.
