Simple fish tacos

This is a fantastic recipe for white fish the kids will love, topped with anything they like from salsa to guacamole and cheese which they can build themselves.
1 ripe mango, peeled and finely chopped
1 red onion, finely chopped
½ cucumber, peeled, quartered and chopped
1 red pepper, deseeded and finely chopped
Small handful roughly chopped coriander
Salt and freshly ground black pepper
8 small tortilla wraps
4 fresh salmon fillets
1 lambs lettuce or romaine head lettuce
100 ml sour cream
50g white cheddar, grated, to serve
In a bowl, mix the mango, onion, cucumber, pepper and coriander.
Season with salt and pepper.
Heat a frying pan and place the salmon fillets skin side down to crisp.
Turn gently after 2-3 minutes and cook for a further 2-3 minutes until the fish is pale pink.
Transfer to a plate and once cool enough to handle, peel the skin off the fillets.
Roughly flake the salmon fillets with a fork, keeping large chunks.
Heat the wraps for 30 seconds in the microwave or over a flame turning with tongs so as not to burn.
Peel the lettuce layers, wash and drain on kitchen paper then arrange onto a plate.
To make a taco, take one wrap, and layer it with the fish, lettuce some salsa and a drizzle of sour cream along with a scattering of cheese.
