Slow cooker cream of tomato soup
Ready for a simple, yet hearty soup recipe that you can make in the slow cooker, then this is ideal.
 

400g tinned chopped tomatoes in their juices

945ml chicken stock

1 tsp oregano

1 tsp basil

1 cup heavy cream

1 tsp salt

1 tsp pepper

2 tbsp butter

Basil, as garnish

Add the tomatoes, chicken stock, oregano and basil to the slow cooker and stir well.

Cook on high for 6 hours.

Strain the soup and puree in a blender or food processor and return puree to slow the cooker.

Add the cream and butter and stir well then serve hot with a garnish of fresh basil and some crusty bread.
