Spicy tomato and red pepper soup

The chilli gives this spicy tomato and red pepper soup a bit of a kick.
2 tbsp olive oil
1 onion, finely chopped
2 cloves garlic, minced
3 red peppers, finely diced
400g tinned tomatoes
1 red chilli, deseeded and finely chopped
750ml stock (chicken or vegetable)
Salt and pepper, to taste
In a large sauce pan gently heat the oil. Add the onion and garlic and cook until they are soft.
Add in the red pepper and tinned tomatoes. Combine together before adding in the chilli and the stock.
Bring to the boil before reducing to a simmer. Leave to cook for 40 minutes.
Season with the salt and pepper.
Garnish with coriander before serving immediately.
