Tangerine and cognac butter
Flavoured butters always make a great cake accompaniment, so why not add an exotic touch to your Christmas pudding with this tangerine and cognac butter?
 

100g unsalted butter

2 tangerines, finely grate the zest and juice

2tbsp orange liqueur, such as cointreau

75-100g caster sugar

2tbsp cognac, or brandy

Place the butter in a bowl. Add the tangerine juice and zest, the orange liqueur and the caster sugar. Cream the butter with all these ingredients until it forms a pale, yellow colour.

Blend in the cognac or brandy, little by little. Taste the butter and add more sugar if necessary.

Put the flavoured butter into a plastic box and store it in the fridge. It will keep for up to 3 weeks.

Take the butter from the fridge and let it soften at room temperature for about an hour before serving.
