Tomato & thyme tarts

Lovely tomato tarts which are a great quick lunch or starter for entertaining guests.
2 sheets frozen puff pastry
2 tbsp milk
1 egg
4-5 ripe tomatoes, sliced ¼ inch thick
1 tbsp olive oil
1 gralic clove, diced
2 tbsp parmesan cheese
Salt and pepper
2 sprigs thyme
Preheat oven to 200°C/400°F/Gas 6.
Cut a round out of each pastry square using a plate as a guide.
Prick the pastry rounds all over with a fork.
Make an egg wash by beating together the milk and the egg.
Brush the wash over each pastry.
Transfer to the oven and bake for 10 minutes.
Leaving a ½ inch border around the edge, arrange the tomato slices in overlapping circles on the pastry round.
Drizzle each tart with a little olive oil and sprinkle each with with parmesan, garlic and thyme. Season with salt and pepper.
Bake until the tarts are golden brown, about 20 minutes.
