Turkey roll ups with fresh pesto
Homemade pesto is incredibly easy to make and absolutely delicious. Basil is known to have disease preventing and health promoting properties.
 

1 bag fresh basil leaves
Juice of ½ lemon
Handful pine nuts
1 large clove garlic, crushed
45g parmesan cheese, grated
100ml olive oil

2 slices wholemeal bread
1 tsp – 1 tbsp pesto sauce
2 slices carved turkey

In a food processor, combine all of the ingredients except the bread and turkey then whizz up.

You can store unused pesto covered in the fridge for up to 1 week or freeze for up to 3 months, defrosting in the fridge.

Cut the crusts off the bread and flatten well with your hands or a rolling pin.

Spread a layer of pesto on each slice of bread, top with the turkey and roll it up.
