Watercress soup with crème fraiche
Watercress has a strong flavour, add the crème fraiche and you have a delicious starter or lunch snack sorted.

50g butter

1 tbsp olive oil

3 potatoes, peeled and finely chopped

250ml vegetable stock

100g watercress, plus extra for garnishing

4 tbsp crème fraiche

Melt the butter in a saucepan over a medium heat. Add the oil and the potatoes and cook for about 3 minutes.

Pour the stock over the ingredients and bring to the boil.

Add the watercress and reduce the temperature so that it is just simmering for about 20 minutes.

Use a hand held blender to make the soup smooth.

Pour into four soup bowls and garnish with the crème fraiche and the rest of the watercress.
