Wholemeal French crêpes

Wholemeal French crêpes
You can serve these healthy crêpes with any fruit. They make a delicious breakfast or filling lunch.

40g margarine
4 eggs
210ml milk
Pinch salt
110g wholemeal flour
1 tsp olive oil
1 tbsp blueberry jam
Handful of blueberries

Gently melt the butter in a saucepan over a low heat. This should only take a minute or so.

Sift the flower into a small bowl.

In another bowl, beat the eggs and milk together. Add the salt and pour in the melted butter.

Make a well in the centre of the flour and pour in the liquid. Whisk until they are well combined.

Place in the fridge for an hour.

Heat the oil on a frying pan and pour one ladle of the mixture onto the pan.

Heat until the batter bubbles and the edges are golden.  Flip after way.

Continue until all the batter is used.

Serve with a dollop of the jam and sprinkling of the blueberries.
