Asparagus cream pasta
This is a delcious sauce and looks amazing too.

1 tbsp olive oil

2 chicken fillets, cut

300g spaghetti

1 bunch asparagus

100ml double cream

1 garlic clove, minced

Handful parmesan cheese, grated

Salt and freshly ground black pepper to season

Heat the oil in a saucepan and cook the chicken on a medium heat. When cooked cut into small bites.

Cook the spaghetti in a pot of boiling water until al dente, about 12 minutes.

While the pasta and chicken are cooking you can make the sauce.

Cut the ends off the asparagus and the stalks.

Cook the asparagus and the stalks in a pot of boiling water for 5 minutes. Drain and remove the stalks.

In a pot, gently heat the cream on a medium temperature. Add the garlic and cook for about 2 minutes.

Pour into a large bowl and add the stalks and parmesan. Smooth with a handheld blender.

Season with salt and pepper.

Drain the pasta, add the cut chicken and pour in the sauce, making sure it covers the pasta.

Serve on plates and top with the full asparagus and season with a little more salt and pepper.
