Beef and tomato stew

A hearty stew with beef and tomatoes, this is pure comfort food.
1 tbsp olive oil
1 large onion, finely chopped
3 medium carrots, sliced
3 celery stalks, sliced
800g beef steak, fat trimmed and cut into pieces
400g tin chopped tomatoes, drained
235ml chicken stock
3 garlic cloves, peeled and crushed
Salt and ground pepper
300g basmati rice
6 tbsp low fat Greek style yogurt
Handful fresh parsley, finely chopped
In a large pan over medium heat add in the oil.
Add the onion, carrots, and celery and cook, stirring frequently, until vegetables are softened. About 10 minutes.
Transfer the vegetables to the mixture to the slow cooker then add the beef, tomatoes, stock, garlic and 1 teaspoon of salt, and a ¼ teaspoon of pepper.
Cover and cook on medium for 6 hours.
Cook the rice according to the instructions, drain and serve with the stew.
Add in a dollop of the yoghurt and a garnish of parsley if desired.
