Sweet potato chilli with beef

A combination chilli with sweet potatoes and savoury beef, loaded with vegetables and goodness that will please everyone in the family.
400g stewing beef
1 large onion, chopped
1 tbsp olive oil
3 cloves garlic, chopped
3 tsp chili powder
1 tsp ground cumin
1 tsp salt
400g mixed beans, rinsed and drained
1 large sweet potato, peeled and largely cubed
200g tinned sweet corn, drained
100g roasted peppers in oil, chopped
2 green chillies, deseeded and chopped
400g chopped tomatoes
Coriander, as garnish
Sour cream or grated cheese, to serve (optional)
In a large skillet over medium heat, brown the beef and drain any fat.
Transfer to the slow cooker.
Cook the onions in the skillet until softened with the olive oil, about 5-8 minutes.
Add the garlic into the slow cooker and transfer the onions to the slow cooker also.
Add the spices, beans, sweet potato, corn, peppers and chillies in.
Pour the tomatoes over top.
Cook on low 8 hours then serve with a dollop of soured cream or grated cheese and garnish with coriander if you like.
