Turn a classic into a staple mid-week dish for the family to enjoy with this super easy recipe.
350ml beef stock
3 tbsp brown sauce
1 tbsp olive oil
400g stewing beef
1 onion, roughly chopped
200g mixed mushrooms, chopped
2 tbsp, Worcestershire sauce
Rice, cooked to serve
200ml light sour cream
Fresh coriander, as garnish
Pour the beef stock into the slow cooker, add the brown sauce and whisk until smooth.
Using the olive oil, brown the stewing beef on both sides along with the onions and mushrooms for a few minutes but be careful not to cook the meat completely.
Add the meat, onions and mushrooms to the slow cooker.
Add the Worcestershire sauce and mix well.
Cook on low for 8 hours.
Add all but a few dollops of the sour cream to the meat mixture in the slow cooker, and stir.
Pour the stroganoff sauce over the cooked rice, and top with remaining sour cream and coriander.
