Carrot soup
Quick and easy to make, it is the ideal way to warm up on a cold afternoon. 

227g carrots

57g onion

2 sticks celery

1L white stock

28g bacon rinds

28g butter

57g flour

500ml millk

Salt and pepper

Pinch nutmeg

Prepare the vegetables and chop. 

Heat the butter in a large saucepan, put in the vegetables and rinds, fry wihtout browning for about 15 minutes. 

Add the stock and bring to the boil. Skim and cook until the carrots are tender.

Remove the bacon rinds.

Sieve or use a liquidiser. Rinse the saucepan and put in the sieved soup. 

Add the flour blended with the milk and stir until it boils for 5 minutes. 

Correct seasoning and serve.
