Fig and mozzarella salad

Delicious beautiful fruit with this light and creamy cheese salad makes an ideal Italian inspired starter.
2 tbsp red wine vinegar
150ml port
1 cinnamon stick
2 star anise
6 figs, halved
90g baby leaf and rocket greens
250g buffalo mozzarella, drained
100g Parma ham
50g pine nuts (optional)
Use a small pan and combine the vinegar, port, cinnamon and star anise.
Bring to the boil, then simmer for 10 minutes until the mixture reduces and turns syrupy. Leave to cool.
Divide a little salad on each of the serving plates.
Place the halved, open side of each of the fig halves into the syrup, then arrange on the leaves.
Tear the mozzarella into bite-size pieces and scatter over the top.
Drizzle with remaining sauce, top with a layer of the ham and scatter over some pine nuts before serving.
