Fish stir-fry

Fish stir-fry
Light and delicious, versatile and quick, this stir fry ticks all the healthy boxes and is loaded with vitamin D.
 

Juice of 1 orange

1 tbsp runny honey

2 tbsp soy sauce

1 tbsp olive oil

2 salmon fillets, skinned and sliced (or fish of choice)

150g broccoli

100g green beans, top and tailed

150g baby spinach

Mix together the orange juice, honey and soy sauce.

Heat the oil in a large wok.

Add the broccoli and stir fry for 2 minutes, add the fish and green beans then stir-fry for a further 2 minutes.

Add the remaining ingredients, and continue to cook, keeping everything moving, for a further 2 minutes.

Don’t let the vegetables lose too much crunch before removing from the heat.

Add the orange dressing and mix through.

Serve immediately with freshly cooked wheat noodles or brown rice if you prefer.
