Fried halloumi, watermelon and cucumber salad

This salad brings fresh crisp tastes to a tangy cheese that make a simple indulgent starter.
½ cucumber, peeled, deseeded and cubed
100g watermelon, cut into cubes/red grapes work well if watermelon isn’t available
Small handful mint, chopped, plus whole leaves to serve
1 tsp olive oil
125g halloumi cheese, drained and cubed
1 tbsp toasted flaked almonds
2 tbsp red onion, roughly sliced
For the dressing
1 tbsp lemon juice
1 tsp clear honey
2 tbsp olive oil
In a serving bowl, toss together the cucumber, watermelon or grapes and the chopped mint.
In a small bowl whisk all of the dressing ingredients together then add some salt and pepper to taste.
Heat the olive oil in a large non-stick frying pan and cook the halloumi, turning occasionally, until golden all over.
Remove and allow to cool.
To serve, add the halloumi to the salad spoon over the dressing and scatter with the toasted almonds abd the red onion.
