Grilled halloumi with quinoa salad.

Loaded with iron, this gluten free dish packs a health punch and is delicious.
3 tbsp olive oil
1 small red onion, sliced
1 large roasted pepper from a jar, thickly sliced, or a handful of ready-roasted sliced peppers
250g quinoa
500ml vegetable stock
Small bunch flat-leaf parsley, roughly chopped
Zest and juice 1 lime
Large pinch sugar
250g pack halloumi cheese, cut into 6 sliced
In a medium saucepan, heat 1 tablespoon of olive oil then add the onion and peppers.
Cook for a few minutes.
Add the quinoa and cook for a further 5 minutes.
Add the stock, cover and reduce heat to a simmer for 15 minutes.
Add half of the parsley and stir through.
Heat the grill.
Meanwhile, mix the lime zest and juice with the remaining parsley, oil, and a large pinch of sugar and salt.
Grill the halloumi until both sides are golden and crisp.
Serve with the quinoa and garnish of limes (optional).
