Spiced quinoa

Make a low-carb healthy grain with a bit of heat.
250g quinoa
1 vegetable stock cube
1 chilli, deseeded and sliced thinly
2 roasted red peppers, deseeded and chopped (from a jar is fine)
4 cherry tomatoes, halved
3 tbsp olive oil
3 spring onions, sliced
225g tin, chick peas, drained and rinsed
Zest and juice 1 lime
Handful of coriander, chopped
Cook the quinoa according to the instructions along with the vegetable stock cube in the cooking water. Leave to cool, then mix with a fork. Mix through remaining ingredients and serve.
