Healthy egg and chips

Love egg and chips, love them even more they are made healthier.
500g potatoes, diced
2 spring onions, sliced
1 tbsp olive oil
2 tsp dried crushed oregano
1 large tomato, chopped roughly
200g small mushrooms
4 eggs
Preheat the oven to 200°C / 400°F / Gas mark 6.
Prepare a roasting tin with greaseproof paper, add the potatoes and spring onions with a drizzle of olive oil and a sprinkle of oregano, tomato and mix well.
Bake for 15 minutes, add the mushrooms and cook for a further 10 minutes until the potatoes are browned and tender.
Using 4 oven safe dishes, divide the vegetables into portions.
Make gaps in the vegetables and crack an egg into each space.
Return to the oven for 3-4 minutes or until the eggs are cooked.
