Mexican style breakfast

Mexican style breakfast
This Mexican style eggs is perfect for a late breakfast. 

½ onion, finely chopped

1 garlic clove, crushed

1 red pepper, chopped

Pinch salt

2 tsp olive oil

1 tin whole tomatoes or 6 fresh tomatoes chopped

1 tsp tomato paste

Fresh coriander leaves to garnish

In a medium saucepan, add 1 tsp of oil and gently cook the onion and garlic together until they are soft. Add the pepper and salt.  Leave to cook for 5 minutes.

Pour in the tin of tomatoes including the juice and add the tomato paste. Leave to cook for about 5 minutes.

While the sauce is cooking, you can fry the eggs.

You will need two eggs per person. Pour the rest of the oil into a frying pan and fry two eggs at a time.

Pour the tomato sauce onto a plate and place the eggs on top.

Garnish with coriander before serving.
