Pasta with a tomato and mint sauce

This tomato and mint sauce is a tasty twist on the tomato and basil sauce.
400g shell pasta
1 tsp olive oil
1 small onion, peeled and finely diced
2 garlic cloves, crushed
6 tomatoes, cut
A handful of mint leaves, roughly torn
Freshly grated parmesan, to serve
Fresh mint leaves, to serve
Cook the pasta according to packet instructions. Drain and set aside.
While the pasta is cooking you can make the sauce.
Heat the oil in a pan over a medium temperature. Add the onion and fry for 2 minutes.
Toss in the garlic and cooked for a further 4 minutes.
Reduce the heat and add the tomatoes and tomato paste leave to simmer for about 5 minutes
Add the mint.
Pour the tomato sauce into a bowl and give it a quick going over with a blender. You can omit this step if you prefer a lumpy consistency.
Pour the sauce over the pasta and garnish with the cheese and mint leaves.
