Prawn caesar salad

This low-cal salad makes for a delicious meal if you are trying to stay healthy. This recipe contains 274 calories, 11.2g of fat, 4.4g of saturates, 4.0g of sugar, 1.4g of fibre and 5.0g of salt.
spray oil
1 garlic clove, crushed
3 tbsp dry vermouth
juice of ½ lemon
200 g shelled raw tiger prawns
2 tbsp finely chopped parsley
1 head cos lettuce, separated into leaves
2 tbsp salad croûtons
1 tbsp grated Parmesan cheese
Dressing:
2 tbsp oil-free vinaigrette
grated zest and juice of 1 lemon
1 garlic clove, crushed
few drops Worcestershire sauce
1 raw small egg yolk (see note)
ground black pepper
Spray a frying pan with oil and place over a medium heat. Add the garlic and stir-fry for 1 minute.
Pour in the vermouth and lemon juice and let it bubble away for 2–3 minutes.
Tip in the prawns and cook for 3–4 minutes, turning halfway through, until pink on both sides. Sprinkle with parsley and remove from the heat.
Mix together the vinaigrette, lemon zest and juice, garlic and Worcestershire sauce. Beat in the egg yolk and freshly ground black pepper.
Toss the lettuce and croûtons in the dressing and pile on to 2 serving plates.
Arrange the hot prawns on top. Pour over the pan juices and sprinkle with Parmesan.
